Good Eats: Avocado Toast

We’ve all heard that breakfast is the most important meal of the day blah blah and yes, it’s true but the reality for me is I am not a breakfast lover!! No really, I’m serious. I would rather eat a steak for breakfast than an omelette.

Now, that being said even though I am not obsessed with breakfast foods, I have been getting a lot better at incorporating breakfast-esque dishes into my morning routine. Avocado toast happens to be one of those quick, easy and really delicious meals that I have constantly been going back to.

Here is a quick version that I made  this morning:

Half of an avocado- sliced (the Hass avocado is the best- they’re ugly brown on the outside and bright green and delicious on the inside, one slice of toasted bread (I used a 12 grain), about 3/4 cup of low fat cottage cheesed with a little drizzle of olive oil, salt, pepper and a pinch of red pepper flakes and 1/4 tsp of chopped fresh chives.

Start with the cottage cheese mixture on the bottom, add the chives on top and then the sliced avocados to finish it off!

I am obsessed with avocados and they are so good for you and I mean when you’re in California, this is where you should take advantage of them. There are so many versions of avocado toast, it really just depends on your personal preference and taste. Another one of my favourite combos is avocado, roasted tomato and prosciutto.
